César De Sainte Maresville, Founder of M&C ASIA

What’s your story?
I’ve been in HK for more than 8 years now and I run a company of Import & Distribution of quality seafood that we created 5 years ago with a close friend. After an internship at the French Trade Commission of HK and a short experience in the hospitality management my job is now to source the best products from the sea for the top dining venues in Hong Kong & Macau
The city itself made us believe it was the right place and the right time to create something of our own. Today I think that you can achieve anything with a big dose of energy and a lot of common sense. Which is why we are here

What excites you most about your industry?
Hong Kong’s F&B scene is unique. I feel very lucky to be part of this vibrant and constantly evolving environment. The city has become the international mecca for food and world renowned chefs have opened a restaurant here or are planning to do so. The western cuisine meeting the chinese culinary heritage is also a great success and has led to growing mutual influence in the way to cook, create dishes or simply select the ingredients.
Dealing directly with chefs and being able to supply some of the greatest restaurants is definitively one of most exciting side of my job.

What’s your connection to Asia?
Asia has always been a kind of mystery and a fantasy until I moved here after my studies in 2006. And yes it worth the trip
